Spatchcocked & Broiled Whole Chicken

Chicken can be hard to cook without drying it out. This recipe has been a near-weekly dinner for our family because it works like a charm.

Ingredients:

Whole chicken
Extra virgin olive oil
Kosher salt
Ground black pepper

Steps:

  1. Lay the chicken on a large cutting board and spatchcock it (use good kitchen shears)
  2. Lightly cover in olive oil
  3. Generously season with kosher salt, more lightly with black pepper
  4. Set on tray or pan designed for high heat
  5. Set into oven, ideally 12” from the broiler (usually the top of the oven)
  6. Turn on broiler (ideally 550º, but 500 will work)
  7. After 25 minutes, rotate tray/pan 180 degrees to ensure even cooking
  8. Wait another 25 minutes and remove from oven
  9. Immediately move chicken to large cutting board and allow to rest 10 min
  10. Carve and serve as desired
