Spatchcocked & Broiled Whole Chicken
Chicken can be hard to cook without drying it out. This recipe has been a near-weekly dinner for our family because it works like a charm.

Ingredients:
Whole chicken
Extra virgin olive oil
Kosher salt
Ground black pepper
Steps:
- Lay the chicken on a large cutting board and spatchcock it (use good kitchen shears)
- Lightly cover in olive oil
- Generously season with kosher salt, more lightly with black pepper
- Set on tray or pan designed for high heat
- Set into oven, ideally 12” from the broiler (usually the top of the oven)
- Turn on broiler (ideally 550º, but 500 will work)
- After 25 minutes, rotate tray/pan 180 degrees to ensure even cooking
- Wait another 25 minutes and remove from oven
- Immediately move chicken to large cutting board and allow to rest 10 min
- Carve and serve as desired
