The best things
This week, I learned how to spatchcock a chicken. For those of you experienced in cooking, this probably doesn’t seem like much of an accomplishment, but one of my goals for my 30s is to really learn to cook. This was yet another step on my journey. Quick shout of to my mom for the video call and making sure I didn’t mess anything up too seriously.
While the chicken was cooking (first time using a broiler, too), I made some homemade gravy. Another first. It was the highlight of the meal.
What I often forget is that sometimes the best things aren’t that difficult to figure out. This dinner I prepared was not a great feat, but it was one of our better meals. I may only be an inch closer to being a great cook, but I’m a mile closer to having the ability to put together a good meal for friends.
There are probably other things that feel intimidating to me that will seem easy or simple or obvious once I jump in and just try them out. That is something worth remembering.
